Not a bad idea but just a lot of unique touches. The painting and building of a truckzilla kit is not really anything difficult. The water cooling has been done before by a few and is a decent idea but having enough water to actually cool the motor and a fan big enough to cool it down fast enough takes a lot of space and adds considerable amount of weight. You can get small liquid pumps that run on 6v and just attach copper tubing around the head tightly, run that all to a central cooling coil (you can just wrap the tubing around a small cylinder to get the shape) and locate the fan in the middle of it.
Jumbo kongs do nothing but rip apart diffs, axles and wheel hex's so I would say skip it and get something else like some jumbo maxx wheel and tires as they are a lot smaller than the kongs but bigger than most anything else. should be a fun project but yes the cooling will pose the biggest issues with look and functionality.
